Roasted Parmesan Broccoli
If you are a broccoli fan, you'll enjoy this recipe very much. Roasted goodness with cheese really brings this dish to the top of my favorite side dish and snack. If you are excluding dairy due to your chronic kidney disease, then I have a trick for you. You'll get the same experience with using nutritional yeast as you would parmesan cheese. Broccoli is incredibly high in vitamin C and loaded with antioxidants.
This vegetable is a wonderful choice for those dealing with CKD and reducing the risk of diabetes.
Makes 2 servings
Ingredients for roasted parmesan broccoli
- 1 pound of broccoli
- 4 tbsp olive oil
- 1 tbsp chili flakes
- 1/2 cup freshly grated parmesan cheese or nutritional yeast
- Salt and pepper to taste

- Preheat your oven to 400 degrees Fahrenheit.
- Put the sheet pan into the oven while it preheats so it gets hot.
- Cut, wash, and dry the broccoli. It will need to be dry before seasoning and cooking.
- Mix the broccoli in a bowl with olive oil, chili flakes, salt, and pepper until fully coated.
- When the oven has reached 400 degrees, remove the pan and spread out the broccoli onto the pan evenly.
- Cook the broccoli for 15 minutes.
- Remove the pan and sprinkle your parmesan cheese or nutritional yeast all over the broccoli florets.
- Return the pan to the oven for an additional 5 minutes until the cheese is melted. If you prefer a crispier and brown look, continue to cook for an additional 2 minutes.
