Aromatic Blended Vegetable Soup

We all have those days where we feel like we can't hold down our food and feel nauseous and need a pick me up. I made a soup that has aromatic flavors and ingredients that I cooked down until a nice golden brown with all the spices, pasta, and seasonings. Once cooked together, I moved all of the vegetables to a blender and blended until I got a level of thickness that I liked. I liked this recipe a lot, I hope you do too!

Makes 3 servings

Ingredients for aromatic blended vegetable soup

  • 2 medium tomatoes
  • 1 medium yellow onion
  • 1 medium yellow pepper
  • 1 medium red pepper
  • 1 cup of fresh spinach
  • 2 single spring onions
  • 2 carrots
  • 1 tsp ground ginger
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 1 tsp garlic granules
  • 2 tsp garlic and ginger paste

Directions for aromatic blended vegetable soup

  1. First, cut all of your vegetables so that they are ready to be cooked.
  2. Once all of the vegetables are prepared, put your yellow onions, spring onions, and tomatoes in a pot.
  3. Cook until they are a light brown color on the onions, and your tomatoes are all soft.
  4. Add your ginger and garlic paste. Then add salt and ground pepper.
  5. Next, add in your carrots, both of the yellow and red peppers, and cook them down until they all caramelized.
  6. Once everything is caramelized, add your spinach, a cup of water, and garlic granules, and ground ginger.
  7. Put the lid on top of the saucepan and let it cook for another 10 minutes.
  8. Then, add all of your sautéed vegetables into a blender and blend for your desired thickness.
  9. Then add the blended veggies back into the saucepan.
  10. For a thinner soup, add more boiled water. For a thick soup, a tablespoon of cornstarch. This is optional.
  11. Lastly, get a whisk to mix your now soup on low heat until done.
